This recipe is made up of leftovers and it's more yummy that way than with fresh ingredients. This is the way my mother made it.

Ingredients

2 c
leftover roast beef, shredded
2 c
leftover roasted potatoes, cubed
1 c
leftover cooked carrots, diced
1/2 c
onion, chopped
1/2 c
green pepper, chopped (optional)
1 Tbsp
butter

Step-By-Step

1In a large saucepan, combine first three ingredients and heat over low-medium heat.
2In a skillet, saute onion and green pepper (if using) in 1 Tbsp. butter over low-medium heat until tender.
3Add onion/pepper mixture to the saucepan and combine well. Continue cooking until heated through.
4Serve with a green salad and rolls.
