I am always on the lookout for easy ways to prepare meals. This is one of my creations from necessity.

Ingredients

1 lb
ground beef, lean (i use the 93/7 blend)
1 c
onion, diced
3 c
cabbage, diced
1 can(s)
(14.5oz can) stewed tomatoes
1 can(s)
(8oz can) tomato sauce, (no salt) (i used hunt’s no salt added)
1/2 c
brown rice, short grain
3 c
beef broth, low sodium (more if you wish)
pepper, to taste

Brown ground beef in a good non stick pan. When the meat is browned add the diced onion, sauteing until opaque.

Add the diced cabbage, stewed tomato, tomato sauce, 1/2 cup brown rice, and 3 cups beef broth. Add pepper to taste. Let come to a boil then turn down to a simmer for 30 to 45 minutes covered.
