Easy Meat and Taters

Since my men are meat and tater guys, they have enjoyed this. It is so easy. It is a main dish recipe that can be served with salad. Tried and true for 40 years!

mashed potatoes, prepared ahead or use left overs
2 can(s)
campbells vegetable soup
1 lb
ground beef
1 small
onion, chopped
1 small
bell pepper, chopped
1 pinch
salt and black pepper
1 c
cheddar cheese, grated (optional)
1/2 c
sour cream (optional)

Directions Step-By-Step

Prepare mashed potatoes or use left over mashed potatoes. Set aside. Cook meat, onion, pepper and drain. Add salt and pepper. Pour mixture into oven proof serving dish. Pour soup evenly over meat mixture. Do not stir. Spread potatoes over this mixture. Heat in oven about 350 degrees for 20 minutes or until mixture is hot. Sprinkle a little grated cheddar over top to serve and 1 teaspoon sour cream on each serving.
