I eat this alot as it sates my desire for mexican food without going over board on carbs I have served it with chips or carb blanco flour torittias it is a personal like only to just plate it and eat without the chips I really hope you enjoy this

Ingredients For diabetic friendly tacos

  • 1/4 pkg
    pinto beans, dried
  • 1/2 lb
    lean hamburger
  • 2 can
    small cans mild enchilada sause
  • 1/4 bottle
    pace picante sause
  • 1 c
    brown rice, raw
  • 1 c
    mexican blend shredded cheese/low fat
  • 1/4 md
    white onion
  • 1 Tbsp
    cumin/divided
  • 1/2 Tbsp
    garlic powder
  • 1/2 tsp
    black pepper
  • 1 slice
    romaine lettuce leaves

How To Make diabetic friendly tacos

  • 1
    cook pinto beans without salt til very tender mash with potatoe masher if not thick enough add some cornstarch, keep warm
  • 2
    cook brown rice without salt use Pace Picante sause instead of water (watch it may stick), keep warm
  • 3
    brown hamburger with cumin,garlic pepper when done drain very well, add to clean skillet and reheat
  • 4
    on plate put some romaine lettuce on top put 1 spoon full of beans and rice, then add hamburger meat top with cheese

    eat and enjoy (you can use canned refried beans but they have loads of salt) I came up with 8 carbs sodium 360 sugar 3mgs
