This is my own personal take on a meat loaf recipe that I saw the Pioneer Woman make on Food Network. It is similiar but also different in so many ways. I know you will be pleased weather you make it as Individual or in the traditional size. The flavor is great, and I shared with my neighbors. You can also halves the recipe if you like, or freeze some for a day you do not have time to cook. It is a great recipe and the flavors are really great.Making individual servings is a quick way to get dinner on the table fast. My husband was very impressed, I won't mention how many he had. SMILE

Ingredients For dean's regular & individual meat loaves

  • 2 1/2 lb
    ground chuck
  • 1 1/2 lb
    lean ground turkey
  • 2 pkg
    onion soup mix
  • 1 lg
    vidalia onion, chopped
  • 3 clove
    garlic, minced
  • 5 md
    eggs, or 4 large beaten well
  • 1 lg
    red bell pepper, chopped
  • 1 1/2 c
    evaporated milk or regular
  • 1 tsp
    black pepper
  • 9 slice
    white bread
  • 1 lb
    oscar mayer bacon, regular slice
  • GLAZE INGREDIENTS:
  • 1 3/4 c
    heinz catsup
  • 1/3 c
    splenda brown sugar blend
  • 2 tsp
    dry mustard powder
  • 1 tsp
    garlic powder
  • 1 tsp
    black pepper

How To Make dean's regular & individual meat loaves

    PREHEAT OVEN TO 350 DEGREES F. In a large bowl add the 9 slices bread along with both packets of onion soup mix. Then pour the milk over all, try to saturate the slices of bread with milk and allow to sit for about 10 minutes.

    Then add both the ground chuck and ground turkey to the bowl, along with the minced garlic, chopped onions,bell pepper, eggs & black pepper. Mix thourgly to combine.

    Lightly spray a long jelly roll pan with non stick cooking spray. Then shape ground meat mixture into individual shaped mini meat loaves and place on pan. Allowing space between each loaf. Then take a strip of bacon and cut in half, (I cut about 5 slices at a time)& wrap each individual meat loaf in bacon, by width or the long way.

    Now in a small bowl combine catsup with dry mustard, brown sugar, garlic powder, & black pepper. Stir well to mix, and spread over each individual loaf, along base and on top. I had enough to make 14 individual meat loaves and 1 larger one, with a few slices of bacon left over, after all was said and done.

    Place in preheated 350 degree F. Oven and bake for 55 minutes to 1 hour. Serve with Yukon Gold Mashed Potatoes and your choice of veggies. I made a stir fry of snow peas, onions, yellow squash & orange bell peppers.
