Slice one onion and saute in shortening until transparent. Remove from heat and set aside. Pound round steak to make thin 5x5 pieces. Season with salt and pepper. Spread slices with mustard. Place one slice of bacon, halved, and 1/4 pickle, sliced lengthwise on each piece of beef. Place one slice of sauteed onion on top. Roll the beef around the pickle and secure with toothpick. Dice remaining onion and brown in shortening. Place beef rolls in greased roaster and pour browned diced onions over top of rolls. Add the beef broth to roaster.
Cover and bake for 1 1/2 hours in a 350 oven and baste every 15 minutes with broth. When done, remove meat rolls to a platter and keep warm. Make gravy by adding flour and sour cream to roaster on stove top. Mix and boil. Mixture will not curdle.
To serve, pour the gravy over the meat rolls. Dumplings are the perfect accompaniment!!
