I have been collecting recipes since I was in junior high home economics classes in the mid-'60s. This is a recipe given to my by my home-ec teacher. It is definitely one of my favorites!

Ingredients For creole steak

  • 1 1/2 lb
    round steak, cut into 6 pieces
  • 1 lg
    onion, cut into chunks
  • 1 lg
    bell pepper, cut into chunks
  • 1/2 c
    sliced celery
  • salt, pepper, and garlic powder to taste
  • 1 can
    tomato sauce
  • 4 Tbsp
    flour
  • 3 Tbsp
    vegetable oil
  • 2 c
    boiling water
  • 1 Tbsp
    kitchen bouquet
  • 1 1/2 Tbsp
    worchestershire sauce

How To Make creole steak

    In 12" skillet heat oil. Season steak pieces with salt, pepper, and garlic powder. Dredge in flour until coated. Brown in hot oil. Remove and drain on paper towels.

    In grease remaining in pan, saute onions, peppers, and celery until clear, but not brown. Return meat to skillet with the onions, peppers, and celery. Add tomato sauce and boiling water. Cover and put into preheated 350 degree oven. Bake until meat is tender...about 45 min.

    Remove from oven, stir and test meat for tenderness. Add Kitchen Bouquet and Worchestershire sauce, stirring to combine well. Taste for salt and pepper. Return to oven covered for another 15 min. or until meat is tender.

    Stir well before serving. Serve over mashed potatoes or rice.
