When my sister and I were in grade school, our mom made this a lot, we didn't have a lot of money, this was hot and filling & we loved it. This is a quick, easy, and can't go wrong recipe. We liked to eat it with hot buttered cornbread. We just called it stuff. Would ask mom, whats for supper, she would always tell us "just stuff"

Ingredients For cowboy soup

  • 1 lb.
    ground beef
  • 1
    small onion, chopped
  • one
    17 3/4 oz can mixed veggies, drained
  • one
    17 3/4 oz can creamed corn
  • one
    17 3/4 oz can stewed tomatoes
  • one
    14 3/4 can spanish rice
  • one
    10 oz can ro-tel diced tomatoes and green chilies

How To Make cowboy soup

  • 1
    Brown meat and onion; add mixed vegetables, corn, tomatoes, rice and Ro-Tel. Simmer about 30 minutes, or to desired thickness.
