My husband thinks is the best meatloaf i ever made. The other few that i made didnt turn out very well. But he likes this one!

Ingredients For cottage meatloaf

  • 1 1/2 lb
    lean ground beef
  • 1\2 c
    ketchup
  • 1\3 c
    tomato juice(i use v8 spicy)
  • 1\2 tsp
    salt
  • 1\2 tsp
    pepper
  • 1\8 tsp
    red pepper
  • 2
    eggs
  • 3\4 c
    fresh bread crumbs
  • 14 c
    finely chopped onions
  • 2 tsp
    mustard
  • TOPPING:
  • 1\4 c
    ketchup
  • 1\2 tsp
    mustard
  • 2 tsp
    brown sugar

How To Make cottage meatloaf

    In large bowl, combine ketchup, juice, salt, pepper and red pepper. Add eggs, bread crumbs, onion and mustard. Mix until blended thouroughly. Add ground beef. Mix gently but thouroughly. Line 9x5-inch loaf pan with foil. Press in beef mixture. In separate bowl, combine topping ingredients; mix well. Spread over beef mixture. Bake at 400* for 35 to 45 minutes, or until done. Drain off fat. Let meat loaf rest 5 minutes before serving.
