Ingredients

..meatloaf..
1 1/2 lb
lean ground beef
1/2 c
ketchup
1/3 c
tomato juice
1/2 tsp
salt&pepper (each)
1/8 tsp
crushed red pepper
2
eggs, beaten
3/4 c
fresh bread crumbs
1/4 c
finely chopped onions
2 tsp
mustard
aluminum foil (to line pan)
..topping..
1/4 c
ketchup
1/2 c
mustard
2 tsp
brown sugar
fresh herb for garnish (optional)

Step-By-Step

1preheat oven to 400 degrees.

2in a large bowl, combine ketchup, tomato juice, salt, pepper, red pepper, eggs, onions and mustard. Mix until throughly blended.

3Mix bread crumbs and ground beef.

4Add beef to liquid mixture, mix gently, but throughly.

5line a 9x5 inch loaf pan with aluminum foil. press meat mixture into pan.

6Mix topping ingredients together in separate bowl; spread on top of meat.

7Bake at 400 degrees for about 35-40 minutes.

8Drain off fat and allow to sit 5 minutes before serving. Garnish with fresh herbs, if desired.
