Ingredients

1 1/2 lb
lean ground beef
1/2 c
tomato ketchup
1/3 c
tomato juice
1/2 tsp
each salt and black pepper
1/8 tsp
red pepper
2
eggs, beaten
3/4 c
fresh bread crumbs
1/4 c
finely chopped onions
2 tsp
prepared mustard

TOPPING

1/4 c
tomato ketchup
1/2 tsp
prepared mustard
2 tsp
brown sugar

OPTIONAL

fresh herbs, for garnish

Step-By-Step

1Preheat oven to 400 degrees F.

2In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard.

3Mix until thoroughly blended.

4Add ground beef.

5Mix gently but thoroughly.

6Line a 9 X 5-inch loaf pan with foil.

7Press in the beef mixture.

8In a separate bowl, combine the topping ingredients.

9Mix well.

10Spread topping over the meat loaf.

11Bake at 400 degrees F for 35 to 45 minutes or until done.

12Drain off fat.

13Rest meat loaf for 5 minutes before serving.

14Garnish with herbs, if desired.
