Ingredients

3-4 lb lb beef rump roast
salt and pepper
2 Tbsp olive oil
1 large onion, chopped
1 c red wine
4 clove garlic
2 c beef broth
6 carrots, cut into 1 inch pieces
2 lb potatos, peeled and cut into 2 inch pieces
1/4 tsp dried thyme
1 bay leaf
2 tsp or greek seasoning (instead of bay leave and thyme)

I've made many a roast with many a recipe. This is by far the best most decadent tasting. It's the one to pull out when you want to impress but maybe don't want to work your tail off. Serve it with some dinner buns and perhaps a salad to complete the meal. (Please note that I add a lot of carrots and potatoes...my kids fight over them when there isn't enough to satisfy them. You could cut down to four carrots if you like)

 

Directions

Sprinkle roast with salt and pepper all over. Heat olive oil in large dutch oven and brown seasoned roast on all sides. Remove roast to plate

Add onions to pan and cook until translucent. Approx. five minutes.

Add roast back to pan with any juices that may have accumulated on plate.

Add wine and broth (I've used reconstituted bullion before, it works just fine) Add garlic and seasoning. (I have used Greek seasoning when I was out of bay leaves and thyme..it was fantastic. You could also probably use something like Old Bay but stay away from seasoned salt)

Cover pan with and bake for about an hour and a half at 350. Roast should be nearly tender.

Add carrots and potatoes to pan and bake for another hour or so until the vegetables are cooked through. Remove bay leaf, if used. Serve meat and vegetables with cooking liquid.

I would love to try this recipe but I have never had luck with a rump roast as they are always too dry and tough. I use chuck roasts but would like to learn how to make a good rump or arm roast!!

You can be pretty sure to get a delicious roast with just about any cut you use with this recipe. I buy rump to make my budget work, with five to feed, and it always turns out fabulous! I'd love to know how it comes out with another roast.
