Clay Hill Farm Yankee Pot Roast

Ingredients

6 lb
rump roast
2 c
red wine
2 c
tomato juice
1 large
minced onion
2
carrots, finely minced
1
minced garlic clove
1/2 c
brown sugar
2
bay leaves
1/4 tsp
nutmeg
salt and pepper to taste

Step-By-Step

1Do not brown the pot roast.

2Place the meat in a heavy roasting pan that has a tight fitting lid.

3Mix all the other ingredients together and pour over the meat.

4Cover and cook at 300 degrees for about 3/4 hour per pound.

5Turn roast over about halfway through cooking time.

6Let roast rest; thicken gravy and serve.
