Ingredients

1 lb ground beef
2 medium onions, chopped
1 c celery, sliced
1 can(s) cream of mushroom soup (or cream of chicken soup)
1 c warm water
1/2 c rice, uncooked
pepper to taste
1 small can of mushrooms, undrained
1/4 c soy sauce
Pinched by deftooltones, and 651 more.

This was one of Mamma's recipes! And one of our favorite wholesome meals growing up. Hope you enjoy.

 

Directions

Brown meat; drain.

Mix meat and remaining ingredients together. Place in a 2 quart casserole dish. (Dish may be sprayed with cooking spray)

Cover and bake for about 1 1/2 hours at a 325 degree oven. (I uncover during the last 15 minutes). Bake until rice is done. Ovens may vary.

This is also good with a can of bean sprouts drained added.

I have been making this for over 40 years.And I top it the last 20 minutes with chinesese rice noodles(La Choy in a can)Also add red and green diced peppers or sliced water chestnuts for crunch. My family loves it and its even good cold!

any ideas on what I could sub for the mushrooms?

You can skip the mushrooms Chelynee. It won't change taste.

Hi Margaret...I make one just like you had described also. It is also posted in my recipe box here on JAP. Also, a favorite. And yes, Chelynne, you can definitely leave out the mushrooms. My daughter doesn't like them also, but, she just picks them out and puts them on my plate. Recipes like this are very versatile leaving so much room to be creative. I imagine that this is how this recipe once transpired. Enjoy everyone and thank you for your comments. =D

I wasn't sure about this recipe at first but decided to try it & I was very pleased with the results. I should have added the sliced water chestnuts for the crunch. I guess I'll have to make it again ;-)

Hi Shelly! I'm so excited! My mom used to make this and it was soooooo good! I could never find the recipe until now! The only thing she did different was that she didn't use mushrooms, but water chesnuts and when it was hot she added chow mein noodles to the top. It was soooooooo yummy! I'm so glad I found this! Now I can make it for my husband and he will know why I would rant and rave about it! Thanks Shelly!

I made this tonight and while my husband and I enjoyed it, unfortunately, my children did not. They don't know what they are missing. I doubled the recipe because my husband likes to have leftovers available for me for my lunches while I'm working and it came out great.
