Blue Ribbon Recipe

With melty cheese and a crunchy shell, these chimichangas are super easy with lots of delicious flavors. Green chiles add a bit of heat, while cumin gives them a slightly smoky flavor. If you like extra heat, use the whole can of green chiles. Add your favorite toppings and you have a simple meal your family will love. These chimichangas should definitely be in your dinner rotation.

Ingredients For chimichangas

  • 1 lb
    lean ground beef
  • 1 tsp
    cumin
  • 1 tsp
    crushed oregano
  • 1/2 tsp
    salt
  • 2 Tbsp
    cider vinegar
  • 1/2
    can of diced green chiles (small 4.5 oz can)
  • 1/4 c
    bottled taco sauce
  • 1/4 c
    sour cream
  • 6
    10-inch flour taco shells
  • 1/2 c
    butter
  • Colby or Colby Jack cheese

How To Make chimichangas

  • 1
    Preheat oven to 450 degrees.
  • Browning meat and spices in a skillet.

    Brown beef and spices. Drain fat from the skillet.
  • Chilis and taco sauce added to the skillet.

    Add green chiles, taco sauce, sour cream, and vinegar. Mix and cool.
  • Putting tortillas in melted butter.

    Melt the butter in a pan. Dip both sides of the tortilla in butter. Drain over pan.
  • Placing ground beef onto tortilla and roll.

    Mound about 1/3 cup of filling in center of tortilla. Wrap and fold.
  • Rolled tortillas, seam side down, placed on a baking sheet.

    Place seam side down on ungreased cookie sheet.
  • Chimichangas baked until crispy.

    Bake uncovered for 15 to 20 minutes or until crispy.
  • Chimichangas placed back in the oven for cheese to melt.

    Remove from oven. Top with cheese and return to oven for 5 minutes or so until cheese is melted.
