Ingredients

1.5 lb
lean ground beef
1
onion, thinly sliced
12 oz
whole kernel corn, vacuum-packed drained
8 oz
tomato sauce with cheese
16 oz
tomatoes, canned whole and undrained
1-2 tsp
chili powder
1 tsp
salt
1/4 tsp
pepper
1/3 c
stuffed olives, sliced
1/2 c
shredded cheddar cheese
1.5 c
tortilla chips, crushed

Step-By-Step

1Crumble meat into a deep, 1 1/2-quart, heat-resistant, non-metallic casserole.
2Add onions and heat, uncovered, in microwave oven 7 minutes or until meat is browned and onions are tender.
3Stir occasionally.
4Drain off excess fat.
5Add corn, tomatoes, tomato sauce, chili powder to taste and salt and pepper.
6Stir to combine.
7Heat, uncovered, in microwave oven 4 minutes, stirring occasionally.
8Arrange olive slices on top of meat mixture and sprinkle with cheese.
9Heat, uncovered, in microwave oven 3 minutes.
10Sprinkle with tortilla chips and heat, uncovered, in microwave oven 1 minute.
