Ingredients

4 lb
round steak, 1/2" thick
1 c
milk
1 c
unbleached all-purpose flour
4 tsp
pepper
4 tsp
salt
milk
4 Tbsp
fat
4 Tbsp
unbleached all-purpose flour
1 qt
milk
"just a pinch" of salt
"just a pinch" of pepper

Step-By-Step

1Tenderize round steak. Dip in milk and then flour, salt and pepper to taste.
2Fry in deep fat at approximately 375 degrees until golden brown.
3After steak is done, pour off fat leaving about 4 tablespoons in pan.
4Add 4 tablespoons flour.
5Stir until smooth.
6Add 1 quart milk.
7Stir and cook until thickened for steak gravy.
