Ingredients

4 lb
round steak, 1/2" thick
1 c
milk
1 c
unbleached all-purpose flour
4 tsp
pepper
4 tsp
salt
milk
4 Tbsp
fat
4 Tbsp
unbleached all-purpose flour
1 qt
milk
"just a pinch" of salt
"just a pinch" of pepper

Directions Step-By-Step

Tenderize round steak. Dip in milk and then flour, salt and pepper to taste.

Fry in deep fat at approximately 375 degrees until golden brown.

After steak is done, pour off fat leaving about 4 tablespoons in pan.

Add 4 tablespoons flour.

Stir until smooth.

Add 1 quart milk.

Stir and cook until thickened for steak gravy.
