Ingredients For cheesy roast beef sandwich w/ caramelized onions

  • GARLIC LOVERS ROAST BEEF:
  • 2 - 3 lb
    beef roast or eye of round
  • 8 clove
    garlic, sliced in 1/2
  • olive oil, extra virgin
  • 1 Tbsp
    salt & pepper
  • 3 Tbsp
    garlic powder
  • 2 tsp
    rosemary, dried
  • 2 Tbsp
    parsley
  • SANDWICH:
  • 1 Tbsp
    olive oil, extra virgin
  • 1 lg
    onion, sliced
  • salt & pepper, to taste
  • 12 oz
    garlic lovers roast beef
  • 1 loaf
    italian bread, cut into 4 pieces
  • 9 slice
    provolone cheese

How To Make cheesy roast beef sandwich w/ caramelized onions

    GARLIC LOVERS ROAST BEEF: Using a sharp knife, pierce meat about 1/2" deep & insert slivers of garlic in each hole, pushing all the way in. In a small bowl, combine salt, pepper, rosemary, garlic powder & parsley; mix to combine. Smear oil all over roast & season with seasoning mixture. Wrap in plastic wrap; then foil & refrigerate 24 hours for flavors to penetrate meat.

    Remove the roast from refrigerator 1 hour before cooking to reach room temperature. Preheat oven to 350 degrees F. Place the thermometer all the way into the center of the meat. Place the roast in a roasting pan & put in the oven. Roast until the thermometer reads 130 degrees F. for rare, 140 degrees F. for medium rare, 150 degrees F. for medium & 155 - 160 degrees F. for well done. Remove the roast from the oven & let it rest 20 minutes before you cut it so that the juices distributed evenly. (I remove my roast beef from the oven when it is 135 degrees F. for medium rare. The temperature will rise an additional 5 degrees as it sits.)

    Slice thin & serve. NOTE: For some reason, the thinner you slice it, the better it tastes. Go figure...

    SANDWICH: Heat a 10" skillet over medium-low heat. Stir in the oil & onions, season with salt & pepper & cook until slightly brown, stirring occasionally; 15 - 17 minutes.

    Slice the bread open, place 3 oz of cooked roast beef on each piece & top with 1/4 of the caramelized onions. Top with cheese & place in the broiler for 2 minutes to melt the cheese, careful not to burn it.
