This recipe was given to me by my neighbor and good friend in Dexter, Maine. She is an excellent cook! This recipe is so easy and kids love it too!

Ingredients For cheesy beefy enchiladas

  • 1 lb
    ground beef
  • 16 oz
    salsa
  • 8 oz
    cheddar cheese, shredded
  • 1 can
    chopped green chiles
  • 1 can
    refried beans
  • 1
    pkg flour tortillas, any size

How To Make cheesy beefy enchiladas

    Brown ground beef. Drain fat. Add 1 cup salsa,6 oz. cheddar, 4 oz. can green chiles and the re fried beans. Stir to blend together.

    In a 9x13 pan place 1 cup salsa. spread around evenly.Take a flour tortilla and spread about 1/4 - 1/2 cup beef filling (depending on the size tortilla you choose)in the middle. Roll up and place seam side down in baking dish. Repeat till you run out of tortillas or room in your pan!

    Pour remaining salsa evenly over rolled up tortillas and sprinkle with remaining cheese. Bake at 350 degrees for 20-25 minutes. Tastes great topped with sour cream!
