Ingredients

1 lb
lean ground beef
1
onion, chopped
1
jalapeno peppers
1 can(s)
enchilada sauce
1 can(s)
black beans, drained
1 tsp
garlic powder
1 tsp
cumin
1 box
corn muffin mix
1 pkg
mexican style shredded cheese

Step-By-Step

1Heat Oven to 350F

2Brown meat with onions and peppers. Stir in the next 4 ingredients; Cook and stir 3 minutes or until heated through. Spoon into 13x9 baking dish.

3Prepare muffin batter as directed on package; You can either stir the cheese into the batter or do like I do and just put it on top. Spread it over the meat mixture.

4Bake 20 minutes or until toothpick inserted in the center of the cornbread topping comes out clean.
