BROCCOLI BEEF SQUARES

My niece, Marianne Lintner, gave this recipe to me many years ago and it has stood the test of time very well. A good hearty meal for a cold winter night.

Ingredients

1 pkg
(10 oz.) frozen broccoli, chopped
1 lb
ground beef
2 c
cheddar cheese, shredded
1/4 c
parmesan cheese
1/3 c
chopped onion
2 c
baking mix
1/2 c
cold water
1 tsp
salt
dash(es)
pepper
4
eggs
1/2 c
milk

Directions Step-By-Step

Drain the broccoli and set aside (do not cook).

Cook beef and onion, drain. Add 1-1/2 cups of the cheddar cheese.

Mix baking mix with water and remaining cheese until soft dough forms. Beat 20 strokes. Pat dough into a greased 13x9" baking dish, pressing 1/2" up the sides.

Spread beef mixture over dough, sprinkle with broccoli. Mix remaining ingredients and pour over broccoli. Bake at 400 degrees for 25-30 minutes.

Remove from oven and let sit for 5 minutes before serving.

Here is a hint: I used fresh broccoli this time and it didn't turn out as well as when using frozen broccoli. I think I didn't chop up the broccoli enough because some of it was a bit shall we say "crunchy." In the past I've always used frozen--so use your own judgment on this.
