I’m in the test kitchen… The sun is streaming through the windows. I’m in the mood for a sammie… I found some small French rolls left over from a catering job… A bit more rummaging about… A nice beef roast (promising)… Various blocks of cheese… Some fresh tomatoes… A plan was forming in my brain… A Brazilian Bauru Beef Sammie. I’ll need a good sauce to compliment the beef, but we’ll talk about that later. If you ever find yourself in São Paulo, you have to try one of the “authentic” Bauru sandwiches. So, you ready… Let’s get into the kitchen.

Ingredients For brazilian roast beef sammie (bauru)

  • THE SAMMIE

    crusty french rolls
  • 1/2 lb
    roast beef, thinly sliced
  • 1 md
    tomato, garden fresh, cut into four slices
  • dill slices
  • 4 oz
    fresh mozzarella cheese
  • 4 oz
    fresh pepper jack cheese
  • 4 oz
    fresh sharp cheddar cheese
  • THE SAUCE
  • 1 Tbsp
    horseradish
  • 2 Tbsp
    mayonnaise
  • 1 tsp
    frank’s red hot sauce

How To Make brazilian roast beef sammie (bauru)

    Gather your ingredients.

    Combine the sauce ingredients, and allow them to rest on the countertop while you prepare the rest of the sandwich.

    Slice the roast, or purchase it already sliced.

    Chef’s Tip: You want thin-sliced beef, but not too thin. If you have it sliced by your butcher, tell him/her that you want it sliced for sandwiches.

    Chef’s Note: I used a smoked bottom round

    Add the cheeses to a pot over a bain marie, and allow to slowly melt.

    Let it get good and melted.

    Slice the tomato; you’ll need four slices.

    Cut the rolls in half, two tops, and two bottoms.

    Hollow out the bottom half.

    Add some of the sauce to the bottom part of the bun.

    Layer the beef on top of the sauce.

    Add the tomatoes.

    Add the pickles.

    Add the melted cheese.

    Place the tops on the rolls, and cut in half.

    Serve with some chips, and beverage of choice. Enjoy.
