sallye's Notes:

Braciole (bra-CHOH-lah) is an Italian word that means steak. This is a very tasty dish using round steak, with very little effort.

Serve it with mashed potatoes or jasmine rice and a side vegetable.

MMMM-MMMM good.

Directions

1
Turn crockpot on to high

Peel onions and carrots and cut into quarters

Cut celery ribs into 3 equal pieces

Place onion, carrots, and celery in food processor and pulse until finely diced

Set aside
2
Trim all fat from steak and cut meat into 8 equal pieces

Using wooden mallet pound pieces until very thin

Set aside
3
Remove casing from Italian sausage and break up into a medium sized mixing bowl

Peel garlic clove and smash

Add cilantro, cheese, garlic, Italian seasoning, lemon pepper seasoning and 1 teaspoon salt

Mix thoroughly (I do this with my hands)
4
Lay steak pieces out on cutting board or waxed paper

Spread each piece with 2 heaping tablespoons of sausage mixture

Roll up jelly-roll fashion and fasten with toothpicks or tie with twine
5
Heat olive oil in heavy skillet to medium hot

Brown steak rolls on all sides

Remove from skillet and set aside on plate
6
In same pan, brown onions, celery and carrots until soft (about 5 minutes)

Add in wine, tomatoes, tomato paste, 1 teaspoon salt and bay leaf

Bring mixture to a boil, scraping bottom of pan with wooden spoon to deglaze
7
When boiling, transfer to crockpot which has been preheated on high heat

Turn crockpot down to low heat

Add steak rolls to crockpot with broth mixture and cook on low for 4-5 hours until steak is tender.

Remove the picks or twine before serving
8
Good served with mashed potatoes or noodles and a vegetable side dish.
