This is fron Lodge cast iron cook book. With a few changes It goes great with soup or chili. When i make this to take to chili cook off's I have gotten great coments.

Ingredients For bob's gheesy-beefy cornbread..

  • 1 lb
    lean cround beef
  • 1 pkg
    taco seasoning mix
  • 1 1/2 c
    self-rising buttermilk corn meal
  • 1 8oz can
    mushrooms drained
  • 2 clove
    garlic,diced
  • 2
    eggs
  • 1(8oz) can
    cream-style corn
  • 2 slice
    bacon
  • 1/4 c
    olive oil, light
  • 1 c
    half and half
  • 1 md
    onion,diced
  • 1
    jalapeno peppers,diced
  • 1 c
    shredded cheddar cheese

How To Make bob's gheesy-beefy cornbread..

    You will need a 10" cast iron skillet (deep). In the skillet cook bacon till chrisp. Remove and dice,now add the beef and taco seasoning, and cook untill no longer pink. remove meat from skillet,and drain.

    preheat oven to 325...In a large mixing bowl. Mix cornmeal,flour,eggs,oil,mushrooms,garlic,half and half,corn. Mix well. lightly greased the skillet.Pour half the mixture into the bottom of the skillet. Top with cooked meat,onion,bacon,cheese,and pepper. Top with remaning cormeal mixture,spread evenly.

    Slip into the oven and bake for 1 hour.Let cool abought 15 min. here is how I serve this.Cut a small peace.Put into a bowl and top with chili.
