Beef & Potato Loaf

- 4 large
- potatoes - peeled and very thinly sliced
- 1 medium
- onion - finely chopped and devided evenly
- 2 lb
- lean ground beef
- 1 can(s)
- evaporated milk
- 3/4 - 1 c
- finely crused crackers - i used club crackers
- 1/2 c
- salt and pepper
- parsley flakes
- additional catsup for toppiing (optional)
- 1 stick
- butter - cut in slices
1Arrange the very thinly sliced potatoes evenly in a greased 9X13 pan. Scatter the thin slices of butter evenly over the top of the potatoes. Sprinkle over the top of the potatoes and the butter 1/2 of the finely chopped onion, salt and pepper to taste, and parsley flakes to taste.
2Mix together the hamburger, evaporated milk, finely crushed crackers, catsup, the other half of the chopped onion, and salt and pepper to taste. I also added a little paprika - optional.
3Spoon hamburger mixture and spread evenly over the potatoes. Spread the top evenly with a thin layer of catsup if desired. Bake 375 degrees for about 1 hour or until meat mixture is cooked and the potatoes are tender.
