Ingredients For beef enchiladas

1 lbground beef, browned

1 canenchilada sauce

olive oil
-
12tortillas
-
1/2 lbcheddar cheese, grated

1egg, beaten

1/2 tspsalt
-
2 pttomato sauce
-
1clove garlic, minced
-
2 canchili pepper, diced

1minced onion
-
2 Tbspoil
How To Make beef enchiladas

1Heat 1/2 inch of oil in skillet and fry tortillas about 15 seconds each side; remove and pat off excess oil.

2In separate skillet heat 2 tablespoons oil and saute onion until tender.

3Add chili peppers, garlic, tomato sauce, salt and pepper.

4Add ground beef.

5Simmer uncovered 10 minutes.

6Dip tortillas in egg, fill with sauce mixture, roll and place in shallow greased baking dish.

7Pour red sauce over tortillas, top with grated cheese and bake uncovered at 350 for 15 minutes.
