I was trying to create something new that my kids would eat - and that I wouldn't feel guilty for serving them. This recipe is quick, kid-friendly, and works great for party appetizer or game-day snack!

Ingredients For baked two bite tacos

  • 1/2 lb
    93/7 ground beef
  • 1/2 c
    shredded cheddar cheese
  • taco seasoning to taste
  • 1/4 c
    nacho cheese tortilla chips
  • 4
    multi-grain tortillas
  • 1/4 c
    salsa, chunky
  • salsa and sour cream

How To Make baked two bite tacos

    Brown ground beef. Add taco seasoning and water per seasoning packet to taste. Add cheddar cheese; melt and blend in skillet. Add nacho cheese tortilla chips and salsa. Blend in food processor until finely ground - about 10 seconds. Set aside.

    Using round cookie cutter or drinking glass, cut tortillas into four circles, for a total of 16. Add one tablespoon beef mixture to each, seal with a little water or toothpicks. Bake at 350 degrees for 10 minutes or until tortillas are slightly brown. Serve with salsa and sour cream.
