This recipe definitely pleased my kids! I loved it as well. We generally make a more authentic Mexican version of tacos having lived in San Diego, so this recipe is a great addition to have on hand. My daughter says she prefers this recipe to our usual one.
I only had about a lb and a third of ground beef, so I eyeballed about 2/3 of a 16 oz. can of refried beans, and about 3/4 of a 15 oz can of tomato sauce. I also just used taco mix to taste since I buy the big container of it at Costco. I can also control the spiciness this way as my younger child's palate doesn't appreciate even moderately spiced food.
I definitely agree with another poster that the flat bottomed taco shells would make life easier. Since my store didn't have them, I used the standard ones and crumpled up tin foil between them in the dish to make them stand up. A pain, but doable.
Nice, family friendly recipe!
