Kelsey "Rose"'s StoryFolks, this recipe has been a generational favorite in Matt Dobbe's family (my daughter's boyfriend). Recently I was visiting with my daughter to care for her and the girls after she had ankle surgery and Matt made these as a welcome meal. They made a triple batch and they disappeared very quickly. The recipe below makes six good size one serving meatloaves or large meatballs or lots of cocktails size meatballs shown here.
1 1/2 lb
bread crumbs (my daughter uses frozen bread)
apple cider vinegar
better than beef bullion
1Heat oven to 350 degrees.
Mix together the first seven ingredients using a light hand. Over mixing can cause them to be tough. Shape into six small meatloaves or large meatballs.
2Mix all of sauce ingredients together and poor over meatloaves. Bake for 45 minutes.
