Had some veggies that I needed to use up before they went bad and this is what I came up with. It is very moist and so yummy. Can be topped with your favorite bbq sauce or any type of gravy

Ingredients For a very veggie meatloaf

  • 1 3/4 lb
    lean burger
  • 4 slice
    garlic cheese texas toast
  • 1 1/4 c
    carrots, shredded
  • 1
    celery stick chopped
  • 1 md
    crown of broccoli tops chopped
  • 3
    green onions, chopped
  • 1 c
    mexican blend shredded cheese
  • 1/4 c
    freshley shredded parmesan cheese
  • 1 lb
    loose sausage (i used regular)
  • 1/8 tsp
    sage
  • 1 tsp
    fresh ground pepper

How To Make a very veggie meatloaf

    Crack your eggs into a large bowl, stir with fork, add milk. Tear Texas Toast put in bowl with eggs and milk, mix and allow to sit until liquid is absorbed.

    Crumble your burger over the bread mixture, add veggies and both cheese, mix until well blended.

    In a small bowl add your sausage, sage and pepper. Mix well.

    Take half of the beef mixture and shape into a football or ball, make a little shallow well and place the sausage mixture in the well and smooth it out. You want to make sure that you spread it out to about one inch from the edges. Put the remaining beef mixture on top and seal. Place bacon strips on top. Place in a roster with a rack and bake at 350° for 45 to 50 minutes or until done. Top with your favorite grave.

    I made an onion gravy which was really good. I took one onion, chopped it up, sauted it in a fry pan with some butter until soft, not brown, added 1/4 cup of flour to the butter and onions, stirred for about 1 to 2 minutes, then added 2 1/2 cups of chicken stock. Simmered that for 10 minutes or so, added 1/4 cup of heavy cream, simmered until thickened, and then I added some fresh pepper and put the mixture in a blender to chop up the onions more. Put it back into the saucepan for about 5 minutes or until the gravy thickened to the consistency I wanted. Husband loved it.
