Ingredients

2 eggs beaten
1/4 c milk
1/2 c dry bread crumbs
1/4 c chopped onion
1 tsp salt
1 tsp ground black pepper
1/2 c diced green pepper
1 1/2 lb ground beef
1/2 c ketchup
2 tsp brown sugar
1 tsp dry mustard powder

Lonna's Notes:

I have tried a lot of recipes and finally with a few additions and subtractions, this is it!

 

Directions

Preheat oven to 350.
Grease 9x5 loaf pan.
In a bowl lightly mix eggs, milk, bread crumbs, onion, green pepper, salt, pepper, until combined.

Gently work in the ground beef until mixed. Press the meat into the loaf pan.

Bake in oven until loaf is no longer pink inside and juices run clear about 50 minutes. Thermometer inserted should read 160 degrees.

While the meatloaf is baking, mix together ketchup, brown sugar, mustard in bowl. Spread on top of meatloaf during last 15 minutes.

I have a Meatloaf recipe with these ingredients...but I do not use bread crumbs anymore. Now I use crushed potatoe chips or flavored crushed crackers.
You plated dish looks awesome.

you are welcome...crushed "Fish, Cheez It, White Cheddar Cheez It, veggie or herb spiced crackers.
Plain potato chips, BBQ, Ranch Flavored...etc I think I've tried them all.
I've even used White Restaurant style tortillas and Fritos.

Crackers or chips are a good idea. Instead of the onion I usually use a package of onion soup mix. We just had this the other night. It's so good with the sauce on top. I usually add a little nutmeg to that and that really adds to the flavor.

YES!!, sounds good to me. If I don't have bell pepper, I don't make a meatloaf. LOL, Like mother, like daughter, even though Mom has been gone for 43 years.

You know what is funny about that Carlita, is I just told my mom last week who was making this recipe...if she didn't have the bell pepper...forget it!
