Health conscious rejoice! This recipe combines super-foods, super fast, in a tasty way. When you eat it don't think oatmeal...think your favorite Japanese rice bowl, just with a nuttier grain. That's what the flavor reminded me of, and I'll be whipping these up often, for sure. Saw numerous savory oatmeal recipes, which inspired me to experiment, and this is a keeper. :) My kiddo gobbled it up saying it was very good.

Ingredients For savory oatmeal a la oyako bowl

  • 1 Tbsp.
    olive oil, extra virgin
  • pinch
    salt & pepper
  • pinch
    garlic powder, or fresh
  • 2
    eggs
  • ASSORTED VEGGIES
  • Some
    swiss chard, kale, or spinach
  • Some
    sliced red cabbage (or white, or both!)
  • Some
    sliced green onions
  • Some
    shredded/sliced pumpkin (optional)
  • Some
    sliced red radishes
  • FOR OATMEAL
  • 1 c
    quick oats
  • just enough water to moisten/cover all the oats (or according to package instructions.)

How To Make savory oatmeal a la oyako bowl

    Heat olive oil in a frying pan. Add veggies (and garlic if using fresh) & lightly sauté. Feel free to do some replacement veggies, but make sure you have plenty of green onions.

    Break two eggs into the pan with the veggies. Sprinkle everything with salt, pepper & garlic powder. Cook till egg is done.

    Prepare 1/2 c. quick oats each, in two separate bowls, by adding water and microwaving for 50 seconds. Go on the light side for water...you don't want it mushy. Top with veggies and egg mix. Dig in with your fork!
