healthy bulgar pilaf

My husband is a diabetic & I am a little on the plump side. We are trying to loose weight & I have been experimenting with Bulgar Wheat for some time.We both found this recipe to be good, healthy & tasty.

Ingredients For healthy bulgar pilaf

  • bulgar wheat - 140 g
  • red onion chopped - 4 tbsp
  • yellow squash cubed - 140 g
  • zuccini cubed - 140 g
  • green peas- 2 tbsp
  • green chillies - chopped - 3 medium
  • ginger - grated - 1 tsp
  • red chilly flakes - 1 tsp
  • olive oil/safflower oil - 1 tbsp
  • salt - to taste (1 tsp approx)
  • veg broth - 400 ml
  • tomatoes chopped - 2 med.
  • ccorriander leaves chopped fine -(10 sprigs)1/4 bunch
  • colby cheese grated - 2 tbsp
  • grated coconut - 2 tbsp

How To Make healthy bulgar pilaf

    Heat a pan and dry roast the Bulgar wheat for a minute or two, until pale brown and soak in the broth.

    Meanwhile, chop the red onions and saute till translucent.Add the green chillies.Then add the chopped vegetables (except tomatoes) along with the ginger and the red pepper flakes and Saute for 2 minutes.Add salt & the broth in which the bulgar has been soaking.Cover & cook for 4 minutes.

    Add the chopped tomatoes & the bulgar & mix well.cook for a minute or two longer, until the broth is all absorbed. Then add the chopped coriander leaves.Mix well. Sprinkle with grated coconut and cheese & serve hot.
