Ingredients

1 c
uncooked jasmine rice
1 c
water
1 c
canned unsweetened coconut milk
1 tsp
salt
2 Tbsp
shredded coconut (sweetened or unsweetened)
fresh or dried cilantro (optional)

Step-By-Step

1Combine the rice, water, coconut milk, and salt in a small pot over high heat. Bring to a boil, then turn temp down to low. Simmer for 20 minutes, until the liquid is absorbed.
2Remove from the heat and stir in the coconut. Fluff with fork and add cilantro, if you'd like.
