Ingredients

1 pkg
bread, white (cut into small squares)

potato, chopped
1
red onion, chopped

yellow bell pepper, chopped
1
tomato on the vine, chopped
1/2 c
green peas, boiled
2 Tbsp
olive oil
2 Tbsp
butter, melted, unsalted
1-2 tsp
chilli powder (depending on the amount of heat you can handle)
1 Tbsp
curry powder
salt to taste
2 Tbsp
lemon juice concentrate
1/4
bunch cilantro leaves, finely chopped (optional)

Directions Step-By-Step

Preheat the oven on Broil setting. In a large casserole dish, combine the bread pieces, little salt, 1 tbsp butter, 1/2 teaspoon chilli powder and 1 tablespoon olive oil. Mix nicely so as to make sure each piece has been coated well. Broil for 6 min or till the bread becomes golden brown in color, depending on the oven and remove the dish and set aside.

Meanwhile, to a sauce pan add 1 tbsp butter, remaining olive oil and saute the onion slices till they turn translucent for about 8 min.

Now stir in 1 tsp chilli powder, curry powder, salt and tomatoes and stir it again with the onion slices. fry for about 5 min.

Boil the potato and bell pepper pieces in the microwave for about 4-5 min and add it to the saucepan.

Once all the vegetables have cooked together for about 5 min, add the lemon juice and cilantro. Finally stir in the bread crumbs.

Serve immediately and hot with Tomato Ketchup!
