Ingredients For asian mandarin chicken salad

  • DRESSING:
  • 2 - 11 oz can
    mandarin oranges, juice & oranges seperated
  • 1/2 c
    rice vinegar
  • 1 Tbsp
    soy sauce, low sodium
  • 1/4 c
    sesame oil
  • 1 pinch
    cayenne pepper
  • 1/2 tsp
    ginger, fresh, grated
  • 3 clove
    garlic, minced
  • 1 c
    mayonnaise
  • SALAD:
  • 1 pkg
    rice noodles
  • 6
    scallions, thinly sliced (both greens & whites)
  • 1
    rotisserie chicken, deboned, cut into bite size pieces
  • 1 c
    almonds, slivered, toasted

How To Make asian mandarin chicken salad

    DRESSING: In a non metal bowl, whisk together all dressing ingredients (except oranges). Refrigerate 30 minutes for flavors to marry.

    SALAD: Cook rice noodles according to directions on package. Cool completely. Chop slightly. Toss oranges, scallions, chicken, almonds & cooled noodles; mix well. Pour dressing over & mix well.

    Eat as is over a bed of lettuce or make into a sandwich.
