Ingredients: Cupcakes; 4 oz (125g) butter; 4 oz (125g) sugar; 5 oz (200g) plain flour); 1/2 tsp baking powder; 2 eggs; 1 shot of Malibu (coconut rum); 1/4 cup of coconut milk; Grated zest of half a lime; 1/4 cup of desiccated coconut; Cream the butter and sugar together and add in the eggs one by one. If it looks as if it is starting to curdle add in a teaspoon of the flour and continue to whisk. Add in the rest of the flour and baking powder, then fold in the Malibu, coconut milk
