Ingredients

4 lg. bananas (very ripe)
1/8 tsp. salt
1/4 tsp. sugar
1/2 c. flour

Step-By-Step

1With a fork, mash the bananas, sprinkle with salt, and mix in sugar. Let stand at room temperature for 15-20 minutes. Add flour until the consistency of pancake batter. Cook as you would pancakes, at medium temperature on a lightly greased griddle. Keep in mind that fruit sugars will burn easily. Turn fritters when top is dry, opaque, and beginning to bubble. Fry until golden brown.
