This is really good if you like eggnog but don't like the fat. This is a reduced-fat version of the thick, rich holiday drink.

If you love eggnog, but not all its calories and fat, you'll love this skinny eggnog recipe. It's a guilt-free way to enjoy the Christmas cocktail. Thick and creamy, this eggnog has just the right amount of spice. There is a tiny bit of rum flavoring which adds to the flavor. Drink this skinny eggnog and you can have more cookies.

Ingredients For skinny eggnog

  • 1/4 c
    cold water
  • 1 Tbsp
    unflavored gelatin
  • 1 c
    powdered fat-free milk
  • 1/3 c
    Splenda
  • 2 lg
    eggs
  • 2 tsp
    vanilla extract
  • 1/4 tsp
    rum extract
  • 1 tsp
    cinnamon, plus more for topping
  • 1/2 tsp
    nutmeg
  • 3/4 c
    boiling water
  • 2 c
    ice water
  • reduced fat whipped cream, if desired

How To Make skinny eggnog

  • Cold water, gelatin, powdered milk, Splenda, eggs, vanilla, rum extract, cinnamon, and nutmeg in a blender.

    In a blender, combine the cold water and gelatin. Let it sit for a couple of minutes. Add the powdered milk, Splenda, eggs, vanilla, rum extract, cinnamon, and nutmeg.
  • Adding boiling water.

    Blend on low for 30 seconds. Add the boiling water.
  • Blending mixture.

    Blend for another 30 seconds on low until gelatin is dissolved.
  • Adding ice water.

  • Blending mixture on high.

    Blend on high for 2 minutes.
  • Eggnog added to a glass with whipped cream and cinnamon on top.

    Divide into glasses. Top with reduced fat whipped cream and a sprinkle of cinnamon.
