Morning Smoothie with a Kick

Janice Joy Miller

I got a Vitamix for Christmas from Santa, and I LOVE it! I use it all the time - mostly to make fruit & veggie smoothies, sometimes soups, and occasionally spreads and such. Today, I felt like a ginger, celery, apple, carrot, grapefruit, lemon, bell pepper smoothie. Usually, I'd add kale or spinach, but today, I didn't have any. Nor did I have any ice! All I had was cubes of frozen coffee. I thought, well, if it's awful - oh well. To my tremendous surprise, it was extraordinary! Something about that roasted coffee flavor with the lemon and other fruits. I will definitely be making this again.

peeled carrot, cut in 3 or 4 pieces
1 small
meyer lemon, cut in half, unpeeled
6 stalk(s)
average size celery (equivalent to about a cup and a half)
knob of fresh ginger, 1" long x 1/2" dia

Directions Step-By-Step

Put all the fruit, vegetables, water, Truvia (or other sweetener) and ginger in a Vitamix blender. If you don't have one, you can use a regular blender, but it won't be as smooth.
Blend on the smoothie setting, or until smooth.
Add frozen black coffee and blend until smooth.
Serve cold. Garnish with an orange slice.
