Lemony Blue Smoothie

- 2/3 cup coconut milk
- 1 to 2 mint leaves
- 1 1/2 cups frozen blueberries
- 1 lemon, squeezed
- 2 tbsp. vanilla greek yogurt
- 3 tbsp. honey
1Blend coconut milk and mint leaves together til mint is thoroughly minced
2Add remaining ingredients to blender. Blend til desired consistency is reached, taking care not to over blend. Over blending will result in a thinner consistency.
3Serve at once with a mint or lemon garnish. Enjoy.
