Need just a bit of buttermilk? Try this substitute.

Pour lemon juice into milk and let stand 5 minutes to thicken. Then stir and proceed with your recipe.

You can also use 1 teaspoon white vinegar to 1 cup milk. Will definitely try the lemon juice though.
