This is a very popular drink in the Middle East. I've made it diabetic friendly to enjoy guilt free.

Ingredients For limonana – frozen mint lemonade, diabetic

  • 2 c
    water, divided use
  • 1/2 c
    splenda or to taste
  • 1 c
    freshly squeezed lemon juice
  • 3 1/2 c
    ice
  • 1/2 c
    fresh mint leaves
  • 1/2 c
    fresh mint leaves
  • 6 sprig
    fresh mint, for garnish (optional)

How To Make limonana – frozen mint lemonade, diabetic

    In a small saucepan, heat 1 cup of water and sugar till the sugar dissolves completely. Remove from heat and allow to cool. In a blender, combine the sugar water, fresh lemon juice, ice, fresh mint leaves and remaining 1 cup of water

    Pulse for a few seconds, then blend for 1 minute till the ice is thoroughly crushed and the drink becomes thick and slushy. Taste it. This recipe produces a mildly sweet limonana, which is the way it's usually served. If you would like it sweeter simply add more Splenda to taste and blend again. Pour into cold glasses and serve. Garnish with sprigs of mint, if desired.
