French Hot Chocolate (Chocolat Chaud)

- whole milk
- 3 oz
- bittersweet chocolate, finely chopped
1Heat milk in a small saucepan set over medium heat. Once milk is hot (but not boiling), slowly whisk in chocolate until it's completely melted.
2Adjust heat slightly so the mixture just boils, whisking constantly for 1 to 2 minutes.
3Cool slightly, then pour into two small cups.
