Ingredients

12 c
whole milk
3 c
sugar
16 large
egg yolks
2/3 c
blanched almonds
1 stick
cinnamon
2 c
premium rum

Step-By-Step

1Simmer milk, sugar, and cinnamon stick until mixture is hot, but not burning

2Process the almonds in a food processer until a paste forms.

3Whisk the paste into the milk mixture and let it cool.

4Beat the egg yolks until creamy, and slowly add in the milk mixture a little at a time, continually mixing slowly.

5Mix in the rum and serve chilled. Remove cinnamon stick before serving.
