The Southside Cocktail comes from The Barrelhouse Flat, in Chicago. A most engaging theory suggests that the Southside was born on the South Side of Chicago during Prohibition; when gang members fought for quality liquor sources, and often required a barrage of citrus to mask he flavor of inferior booze. Today, however, nobody’s bothered by this refreshing blend - - it’s a crowd pleaser.

2 oz. gin

1 lime, juiced

2 lime wedges

1 oz. simple syrup

1 dash angostura bitters

2 sprigs mint, (one is for garnish)

How To Make the southside (illinois)

1Muddle together one mint spring with the lime wedges, and simple syrup in the bottom of a cocktail shaker.

2Add the gin and shake well. Pour into a double old fashioned glass filled with crushed ice.

3Top with club soda and garnish with the remaining sprig of mint.
