- 6 lb
- light floral honey
- 2 1/2 gal
- spring water
- 4 stick
- cinnamon sticks
- 3 tsp
- 1 oz
- fresh yeast
1Combine honey and water in large pan.Heat till it
starts to boil,add spices and reduce heat to low.
Simmer until reduced to six pints of liquid remains.
2Strain and pour into a earthen ware pot and allow to cool.When cool add one ounce of fresh yeast and stir.
Allow to ferment for three days.When fermentation
is over pour into bottles and seal.
Allow to age for one year before drinking.
3You can use what ever spices you like best and
different amounts to suit your taste.
