I love lemon anything, and I was watching Giada on Food Network one day and she was making a lemon dessert and used limoncello, she also said she makes her own, so I went and pulled up her recipe for Limoncello to give it a try , here it is, this recipe is from Giada on www.foodnetwork.com, the photo is mine though
Peel lemons, do not get any of the white pith on the peels,( I use my veggie peeler) place peels in a 1/2 gallon plastic or glass jar, pour the bottle of vodka over, cover with plastic wrap or lid, let set for 72 hours.
In a medium sauce pan over medium heat add water and sugar, heat until sugar is completely dissolved. Let cool about 20 minutes and pour into vodka and lemon peels. Let set for 24 hours, strain with a mesh strainer place into jars and chill.
***NOTE*** after I peeled the lemons I juiced them and poured the juice into ice trays to use in other drinks or dishes that need lemon juice.
