Vanilla Pudding with Watermelon Flakes
Any leftover flaked watermelon makes a great base for a slushy just add juice or liqueur..

- package vanilla cook and serv pudding
- 3 c
- 4 c
- seedless watermelon
- 1/4 c
- granulated sugar
- 2 Tbsp
- lime juice
2Pour liquid into shallow pan with sides. Place pan in freezer for 1 hour; then flake with the tines of a fork.
Put back in the freezer for another hour.Flake again. Return to freezer for another hour.
4In a saucepan combine the vanilla pudding and the milk.
Whisk pudding over medium until pudding comes to a boil and cook for 1 minute.Remove from heat. Pour into 4 serving dessert dishes. When cold and ready to serve sprinkle watermelon flakes on top and sprinkle with pinch of granulated sugar. Enjoy!
