This is a low fat, low carb recipe. Very heart healthy. Good served warm or cold.

Ingredients

1 medium
sweet potato, cooked, pealed and mashed

egg
2 c
milk
1/2 c
oatmeal
1/2 c
brown sugar
1 tsp
vanilla
1 tsp
cinnamom
1/4 tsp
nutmeg

Directions Step-By-Step

Mix all ingredients in medium size mixing bowl, beating well.

Pour into 4 small (1 cup size) oven proof pudding cups.

Bake at 350 for 45 minutes. Cool and serve with whip cream or ice cream.
